A good Indian vegetarian kitchen does not offer “a veggie option.” It offers a table: dal cooked overnight, paneer blistered in the tandoor, chickpeas in a tangy gravy, vegetable biryani sealed and steamed, bread without ghee if you need it vegan.
What we cook for a vegetarian table
Paneer tikka from the clay oven. Kadai paneer with peppers and crushed coriander. Dal khazana — black lentils, cream, butter, all night on low coals. Chana masala, fully plant-based. Vegetable biryani with fried onion. Samosa, pakora, papdi chaat. Roti if you want no butter; garlic naan if you do.
Vegan, ghee, and what to ask
Vegan plates are marked on the menu. Ghee and yogurt hide in gravies that look plant-based. Tell us. The kitchen will confirm rather than guess. That is how we keep trust with Jain, vegetarian, and vegan guests driving from Coral Springs, Parkland, and Coconut Creek.
